Sanpete Style Turkey

Anyone who has lived in Sanpete county, Utah, knows how good this turkey is!

2 c. Sprite or 7up
1 c. soy sauce
1 c. oil
1 1/2 tsp. garlic powder
1 Tbs. horseradish sauce (I don't use this)

5 lbs. fresh turkey breasts
(it is good with chicken too, but something about the turkey makes it extra special!)

Combine the first 5 ingredients in a large bowl (a clean ice cream bucket works well).  Add the meat and marinade at least 12 hours in the refrigerator.  Pull the meat out and grill it on your barbecue until cooked through.

Italian Style Turkey Meat Loaf

I know a lot of people just skip over meatloaf recipes...but believe me, just try this one! My husband LOVES beef so I was hesitant to try this recipe, but it was a hit. It is very moist and flavorful.

(I usually half the recipe for our family of 5)

2 lbs lean ground turkey
1 c. Italian style bread crumbs
1/2 c. ketchup
1 c. grated mozzarella
1 c. finely chopped onion
2 cloves garlic, minced
1/2 c. chopped fresh parsley
2 tsp. dried basil
1 tsp. salt
1/2 tsp. pepper
2 eggs, lightly beaten
2 c. pasta sauce (or a little more if desired)

Heat oven to 350 degrees.

Combine all ingredients except pasta sauce. Mix well. Transfer to baking pan and shape into a loaf about 12 inches long and 5 inches wide. Bake for 40 minutes, then remove from oven and pour pasta sauce over top. Keep baking until it is cooked through, about 30 minutes more. Allow to sit in pan for 15 minutes before slicing and serving.

Turkey-Biscuit Pot Pie

*The original recipe is from Betty Crocker, but I made a few minor changes (listed below).

2 1/2 c. carrots, cut into bite sized pieces
1 c. fresh broccoli, cut into bite sized pieces
1 c. fresh cauliflower, cut into bite sized pieces
(You could substitute the veggies with whatever your family likes... peas, potatoes, beans, squash)
3 Tbs. butter or margarine
1/2 c. chopped onion
3 Tbs. flour
2 c. chicken broth
1/2 tsp. sage
2 c. cubed cooked turkey (you could substitute chicken)

Biscuits:
1 c. Bisquick
1/2 c. milk
1/2 c. shredded cheddar cheese

In 2 qt. saucepan, heat 1 cup water to boiling. Add carrots, broccoli, and cauliflower; cook about 4 minutes or until they are crisp-tender. Drain.

Meanwhile, in a 3 qt. saucepan, melt butter over medium heat. Add onion; cook about 2 minutes, stirring occasionally, until tender. Beat in flour with a whisk. Gradually beat in broth and sage. Reduce heat to medium-low; cook about 5 minutes, stirring occasionally, until sauce thickens. Stir carrots, broccoli, cauliflower, and turkey into sauce. Spoon mixture into 2 qt. casserole dish.

Combine biscuit ingredients, stir until just blended. Spoon batter around the top of the turkey mixture.

Bake at 400 degrees for 25-30 minutes or until biscuits are golden brown.

Turkey Rub

*We love to buy a turkey breast and use this rub. Bake in an oven bag for best results!

2 tsp. salt
2 tsp. sugar
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. paprika
1/2 tsp. black pepper
1 tsp. basil
1/2 tsp. lemon juice
2 Tbs. olive oil

Combine together and spread over turkey. Recipe can be doubled or tripled to cover the turkey efficiently.
