Crispy Beef or Pork

This beef or pork is great for sandwiches, french dip, tacos, carnitas, etc.

2-4 lb. beef or pork roast OR chicken
4 c. beef broth
onion salt/pepper
Manteca- rendered pork fat (visit your local hispanic market and stop by the meat counter to find some)
OR use Crisco or vegetable oil

Cut the roast into 4-5 smaller pieces, work around the bone if it has one.

Place the meat into the instant pot, cover with beef broth.

Cook on high pressure for 45 minutes.  Natural release for at least 45 minutes, and up to 90 minutes.
Don't skip this step, this is what makes the meat fall apart.

Alternatively, you could cook the meat in the crock pot on low for 6-8 hours, or until it is fall apart tender.

Drain the liquid off the meat.  Shred the meat or cut into bite sized pieces.

Heat a deep pot over high heat.  Add a spoonful of manteca.  Allow to heat for a minute, then add some of the meat.  Be careful not to over crowed the pot, you want some empty space around the meat.  Move the meat around so it's not too crowded, sprinkle a little onion salt and pepper on the meat. Don't stir the meat, just let it sit and cook in the hot fat until it starts to get crispy, now stir the meat a little, and let it get crispy on the other side...this only takes a minute or two on each side.

Remove the meat and repeat the process until all the meat is cooked.

Italian Beef Sandwiches

Update:  Feel free to cook the meat as directed below, but our new favorite way to prepare the meat is found here:  crispy beef & pork

2 c. giardiniera pickled vegetables, plus 1 Tbs. brine
1/4 c. mayonnaise
1 1/2 lbs. shaved steak (or slice it as thin as you can)
1 tsp. garlic powder
salt & pepper
2 Tbs. vegetable oil
1/4 c. finely chopped onion
1/2 tsp. dried oregano
1 tsp. minced garlic
1 tsp. flour
2 c. beef broth
4-8 ciabatta rolls split lengthwise

1.  Pulse giardiniera and mayonnaise until finely ground, set aside.
2.  Season the beef with garlic powder, salt, and pepper.
3.  Heat 1 Tbs. oil in a skillet over medium heat.  Add half of the beef, breaking up any clumps, cook for 2-3 minutes.  Remove from skillet and repeat with remaining oil and beef.  Remove to a plate.
4.  Add a little oil and onion to now-empty skillet, cook for 1-2 minutes.  Stir in oregano, garlic, and flour. Then add the broth and brine, scraping up any browned bits.  Simmer until the mixture reduces to 1 cup, about 8 minutes.
5.  Turn off the heat, add the beef back to the skillet and stir to combine.
6.  Spread giardiniera mixture on rolls, then top with beef.

Santa Fe Cheese Soup

*This recipe can easily be adjusted to your liking...add more beef, less beans, more tomatoes, less cheese, etc.

12-16 oz. Velveeta, cubed (we like all 16 oz.)
1/2 lb. ground beef
1 c. beef broth
1 can of corn with liquid
1 can of diced tomatoes
1 can kidney beans (drained & rinsed)
1 can black beans (drained & rinsed)
1/2 tsp. garlic powder
1/2 tsp. chili powder
1/2 tsp. onion powder
1/2 tsp. cumin
1/4 tsp. crushed red pepper flakes

Brown your ground beef in a pot.  Drain the grease and add the broth, corn, tomatoes, kidney beans, black beans, and spices.  Turn heat to medium.  When it starts to boil, turn heat down slightly and add the velveeta cheese.  Stir occasionally as the cheese melts.  Once it has melted simmer for 10-15 minutes.  (You can add a little water or beef broth if you need to.)

We like to eat this with cornbread.

1 Tbs. olive oil
1 small onion, chopped
3 cloves garlic, minced
1/2 lb. ground beef
1/4 lb. sausage
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. crushed red pepper flakes

3 c. mozzarella cheese, shredded
1/2 c. grated parmesan cheese

Heat olive oil in a large skillet over medium-high heat.  Add onion and garlic and cook until onion is tender.  Add ground beef and sausage, salt, pepper, and red pepper flakes.  Cook until meat is no longer pink.  Stir in spaghetti sauce and keep warm over low heat.

Meanwhile, cook ravioli according to package directions, drain.

In a medium bowl, combine sour cream, ricotta cheese, basil, and oregano.

In a greased 9x13 inch pan, layer half of the ravioli.  Top with half of the meat sauce, all of the sour cream/ricotta mixture, and half the mozzarella.  Repeat with the remainder of the ravioli, meat sauce, and remaining mozzarella.  Sprinkle the parmesan cheese on top.  Bake at 350 degrees, uncovered, for 30-40 minutes, until bubbly and cheese is melted.

Braised Beef and Onions

The original recipe is from Land O' Lakes, but I made a few minor changes that I listed below.

2 Tbs butter
1 1/2 lbs sirloin steak cut into 1 1/2 inch pieces (I am sure you could use any cut of meat, the recipe calls for chuck roast, you cook it for a long time, so it will be nice and tender when you eat it)
2 medium onions, quartered
1/2 c beef broth
1/4 c hoisin sauce (found in the asian food section)
2 Tbs flour
1 (8 oz) can tomato sauce
1 tsp basil
1/2 tsp garlic powder
1/2 tsp oregano
1 1/2 c baby-cut carrots
4 medium potatoes, cut in half
(you could add other veggies too)
egg noodles

Heat oven to 325 degrees. Melt butter in a ovenproof pan (I used my dutch oven), add beef. Cook over medium-high heat, stirring occasionally until browned (5-8 minutes). Add onions, beef broth, and hoisin sauce. Cover and bake in the oven for 45 minutes.

Stir flour and spices into tomato sauce. Add carrots, potatoes, and tomato sauce too beef. Continue baking, covered, for another 45 minutes, or until meat and vegetables are tender. Serve over cooked noodles.

Spaghetti Pie

(makes 2)

*I usually make 2 and freeze one for later. When you cook the frozen one, pull it out the day before and put it in the fridge over night. Set it out an hour or two before you plan to bake it. Bake it on 350 for about 45-60 minutes.

1 lb ground beef

1 medium onion, chopped

1 jar spaghetti sauce (I like tomato and basil flavored)

1/2 tsp. sugar

1/2 tsp. oregano

1/2 tsp. garlic salt

16 oz. cottage cheese

8 oz. spaghetti noodles

2 Tbs. butter

1/3 c. parmesan cheese

1 egg, beaten

1/2 tsp. salt

1/4 tsp. pepper

2 c. mozzarella cheese

Brown the hamburger and onion. In the mean time cook the noodles according to package. Once the hamburger is cooked, add the sauce, oregano, sugar, and garlic salt. Cook until heated through.

When the pasta is done, drain, then add the butter, parmesan cheese, salt, pepper, and the beaten egg. Divide the pasta in two equal portions and spread in the bottom of two pie plates.

On top of noodles, spread the cottage cheese, and then the sauce (remember to divide evenly). Bake at 350 for 20 minutes then sprinkle with the mozzarella cheese and bake for another 10 minutes. (*When freezing, just add the mozzarella cheese and freeze it, it doesn’t really matter when baking, it will just be a little crispier!)
